Rice Cooker Quinoa Hotpot
I literally came up with this meal yesterday while I was short on time and needed to make lunch for my daughter and myself in a hurry. We loved it so much I made it for the family that night!
This meal is easy to make, super nutritious and very moreish!
1 cup white quinoa
2 yellow squash
1 red capsicum
3 handfuls of cabbage
2 celery stalks
Handful of pumpkin and sunflower seeds
As much garlic as you like
1 tbs of my wife's homemade veg stock
Splash of tamari
Pinch of black pepper
Pinch of tumeric
Big chunk of butter
1/2 a lemon
Rinse and soak quinoa
Chop all veges
Put quinoa in rice cooker, add stock, water and mix
Put veges, garlic, butter, seeds and spices into rice cooker on top of quinoa
Add a splash of tamari
Turn the rice cooker on and relax till its done
Once meal is cooked serve up in bowls, drizzle with olive oil and lemon juice.
